  • 60 saltine crackers
  • ½ cup unsalted butter (softened)
  • 3 tablespoons sugar
  • 14 oz. sweetened condensed milk
  • 4 egg yolks
  • ½ cup lemon juice

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Crush saltine crackers until fine but not dust-like.
  3. Mix crushed crackers with sugar and softened butter until combined.
  4. Press mixture into an 8-inch pie pan and chill for 15 minutes.
  5. Bake the crust for about 18 minutes until lightly golden.
  6. In a separate bowl, beat together egg yolks, sweetened condensed milk, and lemon juice.
  7. Pour filling into the baked crust and bake again for 16 minutes until set.
  8. Allow the pie to cool completely before slicing.
