Ingredients

  • 1 cucumber, diced
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup fresh salsa (store-bought or homemade)
  • Optional: 2 cups mixed greens for serving

Instructions

  1. Heat a skillet over medium heat and add olive oil.
  2. Season shrimp with garlic powder, salt, and pepper. Cook shrimp in the skillet until pink and opaque (about 2-3 minutes per side).
  3. While shrimp cooks, chop avocados, tomatoes, onion, cucumber, and cilantro; combine in a large bowl.
  4. Once shrimp is cooked, add to the bowl with vegetables. Squeeze lime juice over the mixture and gently fold to combine.
