  • 6 tablespoons butter (cold)
  • 1/2 cup milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup chopped apple
  • 1 cup confectioner's sugar
  • 2 tablespoons milk (for glaze)
  • 1 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with a silicone mat.
  2. In a bowl, whisk together flours, brown sugar, baking powder, and spices.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In another bowl, combine milk, egg, and vanilla; then mix into dry ingredients until just combined.
  5. Fold in chopped apples gently.
  6. Drop spoonfuls of batter onto the prepared sheet and bake for 11–13 minutes until golden brown.
  7. Allow to cool slightly before glazing with a mixture of confectioner’s sugar, milk, and vanilla.
