  • 1 lb ground beef (85% lean)
  • 3/4 cup diced onions
  • 1 Tbsp minced garlic
  • 2 1/2 cups beef broth
  • 1 1/4 cups uncooked long grain white rice
  • 8 oz sliced button mushrooms
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large pot, brown the ground beef over medium-high heat with Italian seasoning, salt, and pepper. Drain excess grease.
  3. Sauté onions and garlic in the same pot until softened.
  4. Add beef broth and rice; bring to a boil. Reduce heat, cover, and simmer for 10 minutes.
  5. Layer mushrooms on top of the rice mixture; cover and cook for an additional 5–10 minutes until rice is tender.
  6. Stir in cream of mushroom soup, milk, sour cream, and half of the cheddar cheese.
  7. Transfer to a greased casserole dish, top with remaining cheese, cover with foil, and bake for 20 minutes.
