Ingredients

  • 2 lbs chuck roast, trimmed and cubed
  • 3 tablespoons olive oil
  • 1½ cups chopped carrots
  • 1 cup chopped celery
  • 2 cups chopped yellow onion
  • 3 tablespoons tomato paste
  • 1½ tablespoons minced garlic
  • 2 (32 oz) cartons low-sodium broth (chicken or beef)
  • 1 cup pearl barley
  • Fresh parsley for garnish

Instructions

  1. Sear the Beef: Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, sear in batches until golden brown. Remove and set aside.
  2. Sauté Vegetables: In the same pot, add remaining olive oil and sauté carrots, celery, and onion until softened.
  3. Add Tomato Paste & Garlic: Stir in tomato paste and garlic; cook until fragrant.
  4. Combine Ingredients: Add broth, soy sauce, Worcestershire sauce, herbs, and seared beef back into the pot.
  5. Simmer: Bring to a simmer, cover, and cook for 45–60 minutes until beef is tender.
  6. Add Barley: Stir in pearl barley and simmer for another 45–60 minutes until tender.
  7. Garnish & Serve: Stir in fresh parsley before serving warm.
