  • 1 pound strawberries
  • 2 cups blueberries
  • 8 ounces canned full-fat coconut milk
  • 1/2 cup unsweetened coconut water
  • Pure maple syrup (optional)

Instructions

  1. For the strawberry layer: Puree strawberries in a blender with coconut water and sweeten if desired. Set aside.
  2. For the blueberry layer: Puree blueberries similarly with coconut water and optional sweetener.
  3. Mix coconut milk with maple syrup until smooth.
  4. Layer: Fill popsicle molds with strawberry mixture (1/3 full), freeze for 10 minutes, then add coconut milk layer, freeze again for another 10 minutes, and top with blueberry mixture.
  5. Insert sticks when frozen slightly, then freeze overnight or at least for 8 hours.
  6. To serve, dip molds in warm water for easy release.
