- 2 cups blueberries
- 8 ounces canned full-fat coconut milk
- 1/2 cup unsweetened coconut water
- Pure maple syrup (optional)
Instructions
- For the strawberry layer: Puree strawberries in a blender with coconut water and sweeten if desired. Set aside.
- For the blueberry layer: Puree blueberries similarly with coconut water and optional sweetener.
- Mix coconut milk with maple syrup until smooth.
- Layer: Fill popsicle molds with strawberry mixture (1/3 full), freeze for 10 minutes, then add coconut milk layer, freeze again for another 10 minutes, and top with blueberry mixture.
- Insert sticks when frozen slightly, then freeze overnight or at least for 8 hours.
- To serve, dip molds in warm water for easy release.
