  4. Bake for 55-65 minutes until just set; allow cooling in the oven with the door slightly ajar for an hour.
  5. For ganache, heat heavy cream until simmering, then pour over dark chocolate chips; stir until smooth.
  6. Spread ganache over cooled cheesecake and refrigerate for at least 4 hours before serving.
