  • 1/2 tsp black pepper
  • 1/2 tsp ground cinnamon
  • 1/4 tsp garlic powder

  • 1/2 cup goat cheese (crumbled)
  • 1/2 cup pomegranate seeds
  • 2 tbsp fresh rosemary (chopped)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the butternut squash cubes with olive oil, salt, black pepper, ground cinnamon, garlic powder, and onion powder until well-coated.
  3. Spread the seasoned squash evenly on a baking sheet and roast for 25-30 minutes until tender and lightly browned; stir halfway through cooking.
  4. Once roasted, sprinkle crumbled goat cheese and pomegranate seeds over the warm squash.
  5. Garnish with chopped rosemary and serve immediately.
