  • 1 ½ tsp baking powder
  • 1 tsp baking soda

  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 cups grated carrots
  • ½ cup crushed pineapple (drained)
  • Optional: ½ cup chopped walnuts
  • For Frosting: 8 oz cream cheese (softened)
  • ¼ cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, beat softened butter with granulated sugar and brown sugar until fluffy.
  4. Add eggs one at a time and blend in vanilla extract.
  5. Gradually add dry ingredients to the wet mixture; stir until just combined.
  6. Fold in grated carrots, crushed pineapple, and walnuts if using.
  7. Spread batter evenly in the prepared pan and bake for about 25–30 minutes until a toothpick comes out clean. Cool completely.
  8. For frosting, cream together cream cheese and butter until smooth; mix in powdered sugar and vanilla until creamy.
  9. Frost cooled bars evenly before cutting into squares.
