- ½ cup brown sugar
- 3 large eggs
- 1 tsp vanilla extract
- 2 cups grated carrots
- ½ cup crushed pineapple (drained)
- Optional: ½ cup chopped walnuts
- For Frosting: 8 oz cream cheese (softened)
- ¼ cup unsalted butter (softened)
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- In another bowl, beat softened butter with granulated sugar and brown sugar until fluffy.
- Add eggs one at a time and blend in vanilla extract.
- Gradually add dry ingredients to the wet mixture; stir until just combined.
- Fold in grated carrots, crushed pineapple, and walnuts if using.
- Spread batter evenly in the prepared pan and bake for about 25–30 minutes until a toothpick comes out clean. Cool completely.
- For frosting, cream together cream cheese and butter until smooth; mix in powdered sugar and vanilla until creamy.
- Frost cooled bars evenly before cutting into squares.
