- 2.5–3 lbs Yukon gold potatoes (thinly sliced)
- 1/4 cup butter
- 1 medium onion (diced)
- 8–10 cloves garlic (minced)
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 cup chicken broth
- 1/2 teaspoon dried thyme
- 1 teaspoon salt
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 3/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 350°F (175°C).
- Slice cleaned Yukon gold potatoes into 1/8-inch rounds.
- In a medium saucepan, melt butter over medium heat. Sauté onion and garlic until soft.
- Stir in flour, then gradually add milk and chicken broth while stirring continuously until thickened.
- Off heat, mix in cheddar, mozzarella, and Parmesan cheeses until combined.
- Grease a casserole dish and layer one-third of the potatoes followed by one-third of the cheese sauce; repeat twice more.
- Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 35–45 minutes until golden brown and tender.
- Allow to cool for about 10 minutes before serving.
