  • 1 pound white button mushrooms, sliced
  • 1 stick unsalted butter
  • 1 tablespoon Dijon mustard
  • 12 tablespoons fresh chives, chopped
  • 12 tablespoons fresh parsley, chopped
  • 12 tablespoons fresh thyme, chopped
  • 34 cloves garlic, minced
  • 1 teaspoon lemon juice
  • 1 teaspoon paprika
  • 1/8 teaspoon cayenne pepper (optional)
  • 1/8 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Clean and slice the mushrooms.
  2. In a small bowl, mix softened butter with Dijon mustard, chopped herbs, garlic, lemon juice, paprika, and optional spices until smooth.
  3. Heat a large skillet over medium heat and add the cowboy butter mixture until melted.
  4. Add the sliced mushrooms and sauté for about 20-22 minutes until golden brown and tender.
