  • 6 bacon strips
  • 1 pound boneless skinless chicken breasts
  • 10 oz penne pasta
  • 1 ½ cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 2 cups fresh spinach
  • 4 small tomatoes (diced)
  • 3 garlic cloves (minced)

Instructions

  1. Cook bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
  2. In the same skillet, add olive oil and cook seasoned chicken breasts until golden brown (about 6-7 minutes per side). Slice into bite-sized pieces.
  3. Sauté minced garlic in butter until fragrant; add diced tomatoes, spinach, paprika, Italian seasoning, crushed red pepper flakes, and salt. Cook until spinach wilts.
  4. Lower heat and stir in heavy cream and Parmesan cheese until combined.
  5. Boil penne pasta until al dente; drain and mix with the chicken and bacon in the skillet until well coated.
