  4. Heat about 1/2 inch of vegetable oil in a cast-iron skillet over medium-high heat until it reaches 350°F.
  5. Drop heaping tablespoonfuls of batter into the hot oil and flatten slightly with a spoon. Fry for about 2–3 minutes per side until golden brown.
  6. Use a slotted spoon to transfer fritters to paper towels to drain excess oil. Serve warm.
