Ingredients
- 3 cups leftover mashed potatoes

- 2 eggs, beaten
- 1⅓ cups panko bread crumbs
- Vegetable oil (for frying)
Instructions
- In a large mixing bowl, combine leftover mashed potatoes, crumbled bacon, cheddar cheese, chives, garlic powder, salt, and pepper until well mixed.
- Form the mixture into balls about 1-2 inches in diameter.
