  • 3 Tablespoons unsalted butter, softened to room temperature
  • 1 and 1/4 cups confectioners’ sugar
  • 1 teaspoon pure vanilla extract
  • 3 cups assorted sliced fresh fruit

Instructions

  1. Whisk together the flour, cornstarch, baking powder, and salt in a medium bowl until well combined.
  2. In a large bowl using a handheld mixer or stand mixer fitted with a paddle attachment, beat the butter and granulated sugar on medium-high speed until creamy (about 2 minutes). Add the egg and vanilla extract; mix until combined. Gradually add the dry ingredients; beat on low speed until just combined. Cover the dough tightly; chill in the refrigerator for at least 20 minutes or up to one day.
  3. Preheat your oven to 350°F (177°C). Grease a 12-inch pizza pan with nonstick spray. Remove chilled dough from the refrigerator. Press it onto the pizza pan in a circle about 9–10 inches wide and roughly 1/3-inch thick. Bake for about 17–19 minutes until edges are lightly browned. Allow cooling completely before decorating.
  4. In another bowl using a handheld or stand mixer, beat together the cream cheese and unsalted butter until smooth (about 2 minutes). Gradually add confectioners’ sugar and vanilla; beat until creamy.
  5. Spread a thick layer of cream cheese frosting over the cooled crust. Decorate with assorted fresh fruits as desired.
  6. Cut into slices and serve immediately. Leftovers can be stored in the refrigerator for up to three days for an easy snack!
