Description

Grilled Zucchini Salad is a refreshing and vibrant dish perfect for summer meals. This salad features tender, charred zucchini paired with juicy tomatoes and creamy mozzarella, all drizzled with a zesty homemade red wine vinaigrette.


Ingredients

  • 1 pound zucchini
  • 6 ounces tomato (vine-ripe or Heirloom)
  • ½ pint colorful cherry tomatoes
  • 8 ounces fresh mozzarella cheese
  • ⅓ cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 2 garlic cloves (minced)
  • 2 teaspoons sugar-free maple syrup
  • 1 ½ teaspoon salt
  • ¼ teaspoon freshly cracked black pepper
  • ⅛ teaspoon red pepper flakes (optional)
  • 810 fresh basil leaves

Instructions

  1. Prepare the zucchini by trimming ends and slicing into 1⁄2” thick rounds. Pat dry with paper towels to remove excess moisture.
  2. Heat a grill pan over medium-high heat and lightly oil it. Grill zucchini slices in batches for 2–3 minutes per side until charred. Let cool.
  3. Sprinkle grilled zucchini with salt.
  4. For the dressing, whisk together olive oil, red wine vinegar, minced garlic, sugar-free maple syrup, salt, black pepper, and optional red pepper flakes until emulsified.
  5. Assemble the salad by layering grilled zucchini, sliced tomatoes, and mozzarella on a serving plate. Drizzle with vinaigrette and top with torn basil.
