Ingredients
- 24 oz salmon (cut into 4 portions)
- 1 cup 2% milk
- 1 tbsp cornstarch
- 2 tbsp butter
- 1 tsp olive oil
- 2 cloves garlic (minced)
- 2 cups fresh spinach (chopped)
- 1 cup cherry tomatoes (halved)
- 1/4 cup sun-dried tomatoes
- 1/2 cup fresh grated parmesan cheese
- Salt and pepper to taste
- Barilla protein + pasta (according to package instructions)
Instructions
- Preheat a nonstick pan over medium heat.
- Cut salmon into four portions. Once the pan is hot, add olive oil and butter.
- Cook salmon skin-side down for 3-4 minutes on each side until golden brown.
- In a bowl, whisk together milk and cornstarch; add minced garlic.
- Remove salmon briefly and pour the milk mixture into the pan, scraping up bits from cooking.
- Stir in spinach, cherry tomatoes, sun-dried tomatoes, parmesan cheese, salt, and pepper; cook until spinach wilts.
- Prepare pasta as per package instructions; drain but reserve some water.
- Toss cooked pasta with the sauce; add reserved water for desired creaminess.
