  • 2 eggs, whisked
  • 3 green onions, sliced
  • 8 ounces bamboo shoots
  • 4 tablespoons cornstarch
  • 4 tablespoons water

Instructions

  1. In a large pot, combine chicken or vegetable broth with fresh ginger, sliced mushrooms, and soaked wood ear mushrooms. Bring to a boil over medium heat and let simmer for 6-8 minutes.
  2. Add cubed tofu and bamboo shoots to the pot; stir gently.
  3. Mix cornstarch with water until smooth and gradually stir into the soup. Simmer for an additional 1-2 minutes until slightly thickened.
  4. Slowly pour whisked eggs into the simmering soup while stirring gently to create silky ribbons. Let it set for one minute.
