- 2.5 pounds cauliflower (or 2x12–16 oz packages cauliflower rice)
- 1 large egg
- 1/2 cup grated Parmesan or Mozzarella cheese
- 1 teaspoon Italian seasoning
- 1/8 teaspoon salt
- 1/4 teaspoon ground black pepper
- Cooking spray
Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- If using whole cauliflower, process it in a food processor until it resembles rice; otherwise, skip this step.
- Bake the riced cauliflower for 15 minutes or microwave it for 8 minutes until softened. Let cool in cheesecloth.
- Drain excess moisture by wrapping the cooked cauliflower in cheesecloth and squeezing out liquid for about 3-4 minutes.
- In a mixing bowl, combine the drained cauliflower with egg, cheese, Italian seasoning, salt, and pepper.
- Shape the mixture into an 11-inch round crust on the prepared baking sheet and bake at 450°F for about 20 minutes until golden brown.
