  • 1 whole egg
  • 1 egg yolk
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt

  • 8 oz cream cheese, softened
  • 1/4 cup sugar (for frosting)
  • Assorted fresh fruit for topping

Instructions

  1. In a stand mixer, beat together the softened butter and sugar until fluffy. Add the whole egg, egg yolk, and vanilla extract; mix well.
  2. In a separate bowl, sift together flour, salt, and baking powder. Gradually add this dry mixture to the wet ingredients, mixing until just combined. Wrap in plastic wrap and refrigerate for at least one hour.
  3. Preheat the oven to 350°F (175°C). Roll out chilled dough to about 1/2 inch thick. Cut into desired shapes and bake on a parchment-lined baking sheet for 9-10 minutes until lightly browned.
  4. For the frosting, beat together cream cheese, sugar, and vanilla extract until smooth.
