Ingredients

  • Jelly crystals
  • Cream
  • Tiramisu sponge fingers (or chopped sponge)
  • Port, sherry, or juice
  • Custard
  • Fresh berries (strawberries, raspberries, blackberries)
  • Thickened cream

Instructions

  1. Prepare the jelly according to package instructions and set in dessert cups.
  2. Once almost set, mix remaining jelly with cream until well combined.
  3. Layer the flummery mixture over the jelly in cups and let it set completely.
  4. Soak crushed sponge fingers in port/juice and layer them on top of the flummery.
  5. Add a layer of custard followed by fresh berries.
  6. Whip thickened cream with custard powder until stiff peaks form; pipe this onto each trifle.
  7. Garnish with reserved berries and mint leaves before serving.
