  • 28 oz. pkg. cream cheese, room temperature
  • 1 cup granulated sugar
  • 1/3 cup lemon juice
  • 1 cup 2% milk
  • 3.4 oz. box instant lemon pudding
  • 21 oz. can blueberry pie filling
  • 16 oz. tub frozen whipped topping, thawed

Instructions

  1. Prepare the graham cracker crust by mixing crumbs and melted butter in a bowl. Reserve 1/2 cup for topping and press the rest into a greased 13 x 9 dish. Chill while preparing the filling.
  2. In a large bowl, beat cream cheese and sugar with an electric mixer until smooth. Add lemon juice and milk, mixing well before gradually incorporating the instant pudding until smooth.
  3. Spread the lemon filling over the chilled crust evenly. Spoon blueberry pie filling on top, spreading gently.
  4. Top with thawed whipped topping and sprinkle reserved graham cracker crumbs if desired.
  5. Cover and refrigerate for at least 2 hours before serving.
