  • 4 cups Granny Smith apples (peeled and cubed)
  • 1/2 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp ground cinnamon
  • 3/4 cup chopped pecans (divided)
  • 3/4 cup powdered sugar (for glaze)
  • 1 Tbsp milk (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9"x13" baking pan.
  2. In a mixing bowl, toss cubed apples with lemon juice; set aside.
  3. Blend oats in a food processor until coarse, then mix with flour, baking soda, and cinnamon in another bowl.
  4. Cream softened butter and sugar until smooth; add eggs one at a time, followed by vanilla extract.
  5. Gradually fold in dry ingredients and apple juice; then mix in the prepared apples and half of the chopped pecans.
  6. Transfer batter into the baking dish, top with remaining pecans, and bake for about 25–30 minutes until golden brown.
  7. Cool slightly before glazing: whisk together powdered sugar and milk and drizzle over slices before serving.
