  • 3 cups old fashioned oats
  • 1 cup unsalted butter, room temperature (for frosting)
  • 7 oz marshmallow fluff/cream
  • 1 cup powdered sugar, sifted
  • 1 teaspoon pure vanilla extract (for frosting)
  • ¼ teaspoon salt (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, combine flour, baking soda, salt, cinnamon, pumpkin pie spice, and oats; set aside.
  3. In a mixer, cream together butter and both sugars until fluffy. Mix in eggs, vanilla extract, and molasses.
  4. Gradually add dry ingredients to wet ingredients until just combined.
  5. Chill dough for 15 minutes, then scoop onto prepared baking sheets.
  6. Bake for 8-9 minutes until just set; cool on wire racks.
  7. Prepare marshmallow frosting by beating butter and fluff until light; mix in powdered sugar.
