  • 2 cups Heavy Cream
  • 6 cups Sugar (divided)
  • 1/2 cup Unsalted Butter
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Baking Soda
  • 1 1/2 cups Walnuts or Pecans (chopped)

Instructions

  1. Lightly grease a 9×13-inch baking dish and set aside.
  2. In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat, stirring frequently for about 20 minutes until fully liquefied.
  3. In a large saucepan or Dutch oven, combine the remaining 4 cups of sugar with the heavy cream and bring to a simmer over low heat.
  4. Once the initial sugar has melted, pour it into the cream mixture while stirring continuously.
  5. Increase heat to medium and cook until the mixture reaches 244°F (softball stage).
  6. Remove from heat and stir in baking soda, then add butter and vanilla extract until smooth.
  7. Allow the mixture to rest for about 20 minutes before folding in the chopped nuts.
  8. Pour into the prepared baking dish and let cool for 1-2 hours or overnight before slicing into squares.
