  • 3 celery ribs, diced
  • 10 ounces cremini mushrooms, quartered
  • 1 medium yellow onion, chopped
  • 4 garlic cloves, minced
  • 16 ounces fresh potato gnocchi
  • 2 ½ cups cooked chicken, shredded
  • 1 cup sweet peas (fresh or frozen)
  • 3 cups chicken stock
  • 1 cup whole milk

Instructions

  1. Melt butter in a large deep skillet over medium heat. Add carrots, celery, onion, and salt; sauté until softened (6-8 minutes).
  2. Stir in mushrooms and garlic; cook until mushrooms release moisture (about 5 minutes).
  3. Sprinkle flour over the vegetables and stir for another 2 minutes.
  4. Gradually whisk in chicken stock and milk until smooth. Add Dijon mustard and Italian seasoning.
  5. Bring to a simmer; add gnocchi and cook uncovered for about 4-5 minutes.
  6. Mix in cooked chicken and peas; let simmer until heated through (3-4 minutes).
  7. Fold in fresh herbs and season with salt and pepper before serving.
