  • 15 Oreos (for the crust)
  • 12 Oreos (chopped for filling)
  • 2 ½ tablespoons butter (melted)
  • 2 (8 oz) packages cream cheese (softened)
  • 2 large eggs
  • ⅔ cup sugar
  • ⅔ cup sour cream
  • 1 teaspoon vanilla extract
  • Optional: 1 cup dark chocolate chips + 2 to 3 tablespoons heavy cream (for ganache)

Instructions

  1. Preheat the oven to 350°F. Line a 7-inch springform pan with parchment paper and wrap it in aluminum foil.
  2. Crush 15 Oreos and mix with melted butter until crumbly. Press into the bottom of the pan and bake for 8–10 minutes.
  3. Lower the oven temperature to 325°F.
  4. Beat cream cheese, eggs, sugar, sour cream, vanilla extract, and salt until smooth. Fold in chopped Oreos.
  5. Pour batter into the cooled crust and bake in a water bath for about 75 minutes.
  6. Allow to cool slowly in the oven with the door slightly ajar for one hour.
  7. Chill in the refrigerator for at least four hours before serving. Optionally top with chocolate ganache.
