  • 16 baby yellow potatoes
  • ½ stick melted unsalted butter (4 tablespoons)
  • 1.5 teaspoons garlic powder
  • 1 tablespoon Italian seasoning (or oregano)
  • 1 teaspoon salt (to taste)
  • ½ cup grated Parmesan cheese
  • ½ cup plain yogurt
  • 1 teaspoon olive oil
  • Fresh dill (finely chopped, or dried) to taste

Instructions

  1. Boil the baby potatoes in a large pot of salted water until tender, about 15-20 minutes.
  2. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. In a mixing bowl, combine melted butter, Parmesan cheese, garlic powder, Italian seasoning, and salt.
  4. Transfer boiled potatoes to the baking sheet and smash each potato gently with a glass.
  5. Coat the smashed potatoes with the butter mixture and bake for approximately 30 minutes until golden brown and crispy.
  6. In a separate bowl, mix yogurt with olive oil, salt, and chopped dill for dipping.
