  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup grape or strawberry jelly (or preferred flavor)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add this to the wet mixture until smooth dough forms.
  5. Scoop out two tablespoons of dough, flatten them into discs, and place half on the prepared baking sheet.
  6. Add one teaspoon of jelly to the center of each disc.
  7. Top with another disc of dough, sealing the edges by pressing them together and using a fork for decoration.
  8. Bake for 12-15 minutes until edges are golden brown.
  9. Cool on the baking sheet for about five minutes before transferring to a wire rack.
