Ingredients
- 1 cup unsalted butter, room temperature
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup granulated sugar (for filling)
- 1/2 pint fresh raspberries (or 1 cup frozen raspberries, thawed)
- 6 eggs
- Juice of 3 lemons
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9" x 13" baking pan by greasing it and lining with parchment paper.
- Blend raspberries with a tablespoon of water until smooth. Strain to remove seeds.
- For the crust, mix butter, flour, salt, and sugar until smooth. Press into the pan and bake for 15-20 minutes until golden.
- While the crust bakes, whisk together sugar and flour in a bowl. Add eggs and lemon juice; mix well. Gradually incorporate raspberry puree until light pink.
- Pour filling over the baked crust and bake for another 25-30 minutes until edges are set but center is slightly wobbly. Cool completely before slicing.
