  • 2 tbsp olive oil, divided
  • 8 oz shiitake mushrooms, thinly sliced
  • 2 tbsp fresh ginger, minced
  • 4 garlic cloves, minced
  • 6 cups vegetable broth
  • 2 tbsp soy sauce
  • 1620 oz frozen potstickers
  • 5 scallions, thinly sliced
  • 3 baby bok choy, leaves separated
  • 2 tsp toasted sesame oil
  • Freshly-ground black pepper (to taste)

Instructions

  1. Heat 1 tablespoon of olive oil in a stockpot over medium-high heat. Add sliced shiitake mushrooms and sauté until browned.
  2. Stir in remaining olive oil, minced garlic, and ginger; sauté until aromatic.
  3. Pour in vegetable broth and soy sauce; bring to a boil.
  4. Add frozen potstickers, half the sliced scallions, and bok choy leaves; simmer for 3-4 minutes until heated through.
  5. Stir in toasted sesame oil; season with additional soy sauce and pepper to taste.
  6. Serve hot, garnished with remaining scallions.
