  • 3/4 cup sourdough discard
  • 3/4 cup water
  • 3 tablespoons honey or maple syrup
  • 6 tablespoons melted butter (plus an additional 3 tablespoons for filling)
  • 1/2 cup brown sugar
  • 1 tablespoon cinnamon
  • 1 cup powdered sugar
  • 4 oz cream cheese
  • 2 tablespoons butter
  • 2 tablespoons cream

Instructions

  1. Preheat the oven to 375°F.
  2. In a small bowl, mix together melted butter, brown sugar, and cinnamon for the filling.
  3. In a large bowl, combine flour, baking soda, baking powder, and salt. Add honey, melted butter, water, and sourdough discard; stir until combined.
  4. Knead until soft (about five minutes) and roll out the dough into a rectangle.
  5. Spread the cinnamon mixture over the dough and roll tightly into a log.
  6. Slice into 12 equal pieces and place in a baking dish lined with parchment.
  7. Bake for 25–35 minutes or until golden brown.
  8. Let cool slightly before frosting with a mixture of powdered sugar, cream cheese, melted butter, and cream.
