Ingredients

  • 1 lb spaghetti
  • 1 can olives
  • 10 oz cherry or grape tomatoes
  • 1 cucumber
  • 1 large carrot
  • 1 avocado
  • ½ cup pepperoncini
  • 1 Tbs Mrs. Dash seasoning salt
  • 1 Tbs lemon pepper
  • 8 oz Roasted Red Pepper Vinaigrette

Instructions

  1. Cook spaghetti in boiling salted water until al dente. Rinse under cold water and drain.
  2. Prepare vegetables: halve tomatoes, slice cucumber, halve olives, grate carrot, chunk avocado, and slice pepperoncini.
  3. In a large mixing bowl, combine cooked spaghetti and all prepared vegetables.
  4. Add seasoning and vinaigrette; mix well.
  5. Cover and chill for at least 2 hours before serving.
