  • 1 red pepper
  • 1 orange pepper
  • 1 batch cilantro lime rice
  • 1 avocado

Instructions

  2. Press the tofu to remove excess moisture, then cut into cubes.
  3. Mix spices in a bowl and coat the tofu cubes.
  4. Toss tofu with olive oil and sriracha.
  5. Arrange tofu and chopped peppers on a baking sheet lined with parchment paper.
  6. Bake for approximately 30–35 minutes, brushing tofu with remaining sriracha halfway through.
