  • 16 ounces fresh mushrooms (cremini or button)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 6 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1½ teaspoons Worcestershire sauce
  • 1½ teaspoons soy sauce
  • Seasoning: paprika, onion powder, oregano, tarragon, black pepper, chili powder

Instructions

  1. Clean the mushrooms with a damp cloth and trim the ends.
  2. Heat olive oil and 1 tablespoon of butter in a skillet over medium heat. Add mushrooms and sprinkle with salt; cook undisturbed for 3 minutes.
  3. Mix garlic with spices (paprika, onion powder, oregano, tarragon, black pepper, chili powder) in a bowl; add to skillet after mushrooms have seared.
  4. Stir in Worcestershire sauce and soy sauce; cook for an additional 2–3 minutes until reduced slightly.
  5. Add remaining butter until melted; garnish with chopped chives before serving.
