  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 15 ounces canned black beans (drained and rinsed)
  • 8 ounces canned corn (drained)
  • 2 cups halved cherry tomatoes
  • 16 ounces Catalina dressing
  • 3 tablespoons sour cream
  • 9 ounces Nacho Cheese Doritos (crushed)
  • 2 cups shredded iceberg lettuce
  • ¼ cup chopped cilantro

Instructions

  1. Cook rotini in boiling water according to package directions; drain and rinse with cold water.
  2. In a skillet, brown ground beef until fully cooked; add taco seasoning and simmer for 5 minutes.
  3. In a large mixing bowl, combine cooked pasta, seasoned beef, black beans, corn, and cherry tomatoes.
  4. Whisk together Catalina dressing and sour cream; pour over the pasta mixture and stir to coat.
