  • 1 medium onion (finely diced)
  • 1 medium red pepper (finely diced)
  • 1 clove garlic (minced)
  • 4 oz canned green chiles
  • 15 oz black beans (rinsed & drained)
  • 10 oz frozen corn
  • 3 cups shredded Mexican blend cheese
  • 10 oz red enchilada sauce
  • 32 oz frozen tater tots

Instructions

  1. Preheat your oven to 400°F (204°C) and prepare a baking dish with non-stick spray.
  2. In a large skillet over medium heat, sauté the ground beef, onion, and red pepper until cooked through. Add minced garlic towards the end and drain excess fat.
  3. Stir in green chiles, taco seasoning, black beans, corn, and half of the cheese until well combined.
  4. Transfer the mixture into the baking dish; drizzle enchilada sauce on top and layer with tater tots.
