Ingredients

  • 2 cans of tuna (5 oz each), drained
  • 1 medium onion, chopped
  • 1/2 stalk of celery, chopped
  • 1 clove garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 34 tablespoons mayonnaise
  • 3 tablespoons extra virgin olive oil
  • 1/3 cup shredded mozzarella cheese
  • Slices of bread (your choice)
  • Softened butter
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine drained tuna, onion, celery, garlic, and parsley.
  2. Add mayonnaise and olive oil; mix well. Stir in mozzarella cheese and season with salt and pepper.
  3. Heat a non-stick skillet over medium heat with 1 tablespoon olive oil.
  4. Butter one side of a slice of bread; place it butter-side down in the skillet. Top with about 2 tablespoons of the tuna mixture.
  5. Butter another slice of bread on one side and place it butter-side up on top of the tuna mixture.
  6. Grill until both sides are golden brown and the cheese is melted.
