Ingredients
- 2 cans of tuna (5 oz each), drained
- 1 medium onion, chopped
- 1/2 stalk of celery, chopped
- 1 clove garlic, minced
- 1 tablespoon fresh parsley, chopped
- 3–4 tablespoons mayonnaise
- 3 tablespoons extra virgin olive oil
- 1/3 cup shredded mozzarella cheese
- Slices of bread (your choice)
- Softened butter
- Salt and pepper to taste
Instructions
- In a medium bowl, combine drained tuna, onion, celery, garlic, and parsley.
- Add mayonnaise and olive oil; mix well. Stir in mozzarella cheese and season with salt and pepper.
- Heat a non-stick skillet over medium heat with 1 tablespoon olive oil.
- Butter one side of a slice of bread; place it butter-side down in the skillet. Top with about 2 tablespoons of the tuna mixture.
- Butter another slice of bread on one side and place it butter-side up on top of the tuna mixture.
- Grill until both sides are golden brown and the cheese is melted.
