Ingredients

  • 12 cups low-sodium beef or vegetable broth
  • 5 cups green or red cabbage, thinly sliced
  • 1 large onion, chopped
  • 3 medium carrots, chopped
  • 3 large beets, peeled and cut into matchsticks
  • 4 large potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 6 ounces low-sodium tomato paste
  • 2 teaspoons salt
  • 3 bay leaves
  • 1 tablespoon white vinegar
  • Ground black pepper to taste
  • Fresh dill or parsley for garnish

Instructions

  1. In a large pot, bring the broth and bay leaves to a boil.
  2. Add the cabbage, cover, and simmer on low heat for 20 minutes until tender.
  3. In a sauté pan, heat olive oil over medium heat; add onion and carrots, cooking for about 5 minutes until softened.
  4. Stir in the beets and cook for another 3–4 minutes.
  5. Combine the sautéed vegetables with the cabbage, then add cubed potatoes, tomato paste, and salt. Cook for an additional 20 minutes until potatoes are tender.
  6. Season with vinegar, sugar (or maple syrup), garlic, and pepper to taste; allow resting for 10 minutes before serving with fresh herbs.
