Ingredients
- 12 cups low-sodium beef or vegetable broth
- 5 cups green or red cabbage, thinly sliced
- 1 large onion, chopped
- 3 medium carrots, chopped
- 3 large beets, peeled and cut into matchsticks
- 4 large potatoes, peeled and cubed
- 2 tablespoons olive oil
- 6 ounces low-sodium tomato paste
- 2 teaspoons salt
- 3 bay leaves
- 1 tablespoon white vinegar
- Ground black pepper to taste
- Fresh dill or parsley for garnish
Instructions
- In a large pot, bring the broth and bay leaves to a boil.
- Add the cabbage, cover, and simmer on low heat for 20 minutes until tender.
- In a sauté pan, heat olive oil over medium heat; add onion and carrots, cooking for about 5 minutes until softened.
- Stir in the beets and cook for another 3–4 minutes.
- Combine the sautéed vegetables with the cabbage, then add cubed potatoes, tomato paste, and salt. Cook for an additional 20 minutes until potatoes are tender.
- Season with vinegar, sugar (or maple syrup), garlic, and pepper to taste; allow resting for 10 minutes before serving with fresh herbs.
