  • 4 skinless boneless chicken thighs
  • 2 tbsp chipotle paste
  • 2 tbsp honey
  • 1 1/2 tsp tomato puree
  • 1 tsp salt
  • 2 large garlic cloves
  • 200g fresh pineapple chunks
  • 1 small shallot
  • juice 1 lime, plus extra wedges for serving
  • small handful fresh coriander, roughly chopped
  • 1 ripe avocado, cubed
  • 8 small corn or flour tortillas

Instructions

  1. Whisk together chipotle paste, honey, tomato puree, salt, and crushed garlic in a mixing bowl.
  2. Cut chicken into bite-sized pieces and coat with the marinade. Let it sit while preheating the oven to 200°C (400°F).
  3. Spread marinated chicken and pineapple on a baking tray and roast for 30 minutes until cooked through.
  4. While roasting, prepare shallot and cube avocado.
  5. Warm tortillas in a hot pan if desired. Assemble tacos by placing chicken and pineapple mixture in tortillas, topping with shallot and avocado.
