- 6 cups chicken broth

- ½ cup heavy cream or half-and-half
- 2 cups rotisserie chicken, shredded
- 1 cup spinach or kale, chopped
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Sauté onion until translucent (about 4 minutes), then add garlic and cook for another 30 seconds until fragrant.
- Add sliced mushrooms and cook for 5–7 minutes until browned and tender.
- Stir in flour and cook for about 2 minutes to remove the raw taste. Gradually whisk in chicken broth to prevent lumps.
- Mix in thyme and rosemary; allow the soup to simmer for about 10 minutes.
- Add shredded rotisserie chicken, greens, and heavy cream. Simmer for another 5 minutes. Season with salt and pepper before serving.
