Preheat your oven to 350°F (175°C).
In a stand mixer or with a hand mixer, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Scrape down the sides of the bowl. Add the egg and vanilla extract, and mix until fully incorporated.
Add the flour, baking soda, and salt. Mix until a soft, non-sticky dough forms.
Gently fold in the chocolate chips until evenly distributed.
Scoop the dough into 1 ½ tablespoon portions (a #40 cookie scoop is ideal).
Place the dough balls on a baking sheet lined with parchment paper, silicone mat, or leave ungreased. Space them evenly.
Bake for 8–10 minutes, or until the edges begin to turn golden brown.
Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
