  • 1 tablespoon olive oil
  • ½ cup onion finely chopped
  • 3-4 cloves garlic minced
  • 1 tablespoon butter
  • 1 pound chicken breasts cut into bite-size pieces
  • ½ teaspoon each: Italian seasoning smoked paprika, red pepper flakes, garlic powder, salt, and pepper
  • 1 cup heavy cream or substitute half-and-half for a lighter version
  • ½ cup Parmesan cheese grated
  • ½ cup sun-dried tomatoes chopped
  • Fresh basil leaves for garnish

Instructions

  • Cook the Pasta – Prepare the pasta according to package instructions. Drain and set aside.
  • Sauté Onions and Garlic – Heat olive oil in a large skillet over medium heat. Add the chopped onions and minced garlic, then sauté until fragrant, about 2-3 minutes.

  • Make the Sauce – Stir in the heavy cream and Parmesan cheese. Let the sauce simmer for 3-4 minutes, stirring occasionally, until it thickens slightly.
  • Add Tomatoes and Pasta – Stir in the sun-dried tomatoes and cooked pasta, tossing everything until well coated in the creamy sauce.
  • Serve – Garnish with fresh basil leaves and serve immediately.
  • Notes
  • For a lighter version, substitute half-and-half for heavy cream.
  • Adjust seasoning to taste before serving.
